An iconic wine that displays the McGuigan family’s dedication to winemaking. A wine that truly represents the McGuigan philosophy. Picked in the cool of the night and transported to the winery, the fruit pressings are fermented in 7-tonne open vat fermenters for 10 days. Once fermentation is complete the wine is transferred to new and old French oak barrels for 24 months to mature before bottling. The wine is then cellared for a further two years to continue to develop before release.
This wine contains 64% Cabernet grapes and 36% Shiraz grapes which gives it remarkable complexity. The Philosophy is designed to have distinct power, yet refined elegance. We achieve this by sourcing wines from regions that have slightly different attributes that add to the depth and complexity of the wine. A portion of the Cabernet fruit was sourced from Langhorne Creek as this region is known for producing wines with excellent structure and power. The rest of the Cabernet was sourced from the region of Wrattonbully to further enhance the aromas, flavour and elegance of the wine. The Shiraz grapes were obtained from the Clare Valley to achieve the intense fruit flavours and sweet spice characters that Shiraz is known for.
